Citrus Shortcake


Base

250gms butter
1/2 cup icing sugar
2 cups flour

Cream butter and sugar. Add flour. Press the dough into a 23cm baking tin. Bake at 180degC for approximately 15 minutes.

Topping

3 tablespoons flour
3 large eggs
1 cup caster sugar
1/3 cup lemon juice
Grated rind from 1 lemon

Sift flour and sugar and add lightly beaten eggs. Whisk. Then add lemon juice and rind. Pour mixture onto cooked base. Bake at 180degC for 15-20 minutes.
While still hot dust with icing sugar. Cut into squares.

*It is easy to overcook this, so stick to the cooking times stated as closely as possible.
