Easy Fruit Tart

This is a really quick desert, if you're looking for one to whip up. It tastes best with a strong fruit, such as plums or quinces, or rhubarb, but any fruit will do, really. I got the recipe from tinyhappy.


Ingredients:

2 large eggs
150 gms white sugar
100 gms butter
150 mls milk
175 gms flour
3 tsps baking powder

Enough sliced fruit to cover the surface of the pie dish.

Method:

Whisk the eggs and sugar until thick and creamy. Put butter and milk into a saucepan and stir until just boiling. Remove from heat. Sift flour and baking powder into the egg mixture, then pour in the milk mixture. Fold all the ingredients together until smooth.
Pour into a greased pie dish. Arrange the sliced fruit over the top. (You could also sprinkle over a little sugar.) Bake at 180 deg.C  for 20-30 mins.
