Sea Foam Candy

This does not last long in our house! And is surprisingly really simple to make. You do need to be able to concentrate though, so choose a moment when the house is quiet.


Sea Foam Candy

1 3/4 cups packed brown sugar
3/4 cup white sugar
1/2 cup hot water
1/4 cup corn syrup (or glucose syrup)
1/4 tsp salt
2 egg whites
1 tsp vanillla
1 tsp pecan flavoured extract
1/4 cup chopped pecans

Combine the brown and white sugars, water, corn syrup and salt in a heavy 2 quart pan. Cook covered until mixxture boils rapidly. Remove lid, place candy thermometer in pan and cook without stirring to 260degF (127degC). Remove from heat.

Beat egg whites until stiff  (I do this before I start boiling the sugars). Pour the hot syrup in a thin stream over egg whites, beating constantly with electric mixer on high speed.
Add vanilla and flavourings.
Continue beating until soft peaks form and candy starts to lose its gloss. Stir in nuts and working quickly drop by spoonfuls onto waxed paper. When set, store in airtight container.
