Potato and Parmesan Gratin

These potatoes are heavenly. They're creamy and cheesy and we love them for special occasions.

Potato and Parmesan Gratin

1 tsp olive oil
1 clove garlic, peeled
8 large baking potatoes
About 1/2 cup freshly grated parmesan
1 TBSP fresh thyme leaves
1/2 cup each: milk, cream
1 tsp salt

Preheat the oven to 180degC. Brush a baking dish with oil and rub with garlic clove. Peel ptatoes and slice thinly, about 2mm. Arrange a layer in base f dish then sprinkle with a little parmesan and thyme. Repeat layers until dish is full.

Heat milk, cream and salt to near boiling. Pour over potatoes and sprinkle with more parmesan. Cover with foil and bake 40 minutes then remove foil and bake 20-30 minutes or until golden and potatoes are tender.
