Bottled Cinnamon Pears
2kg Pears
1-2 lemons, juiced
4 cups water
2 cups sugar
3 cinnamon sticks
6 cardamom pods
1 star anise
Peel, core and quarter pears, dropping them into a bowl of water with the lemon juice added to stop them browning.
Place water, sugar and spices into a pan large enough to hold the pears and bring to the boil. Add drained fruit and simmer 5-10 minutes until tender.
Using a slotted spoon, transfer the fruit to hot, sterilised jars. Pour in syrup right to the rim, releasing any air bubbles with a clean knife and seal, using the overflow method.
* Makes two 1-litre jars.
