Peanut Butter Cookies



Ingredients:

115gm butter
3/4 cup light brown sugar
1 egg
1 tsp Vanilla
1 cup Peanut Butter (crunchy is best)
1 cup flour
1/2 teaspoon of Baking Soda
A pinch of Salt

Method:

Put the softened butter and sugar into a large bowl. Beat with an electric mixer until pale and creamy.
In a seperate bowl, mix the egg and vanilla extract. Gradually beat into the butter mixture, beating well after each addition.

Mix in the peanut butter. Sift the flour and baking soda and salt together into the mixture to form a soft dough. Wrap in clear film and chill for 30 minutes. (I only chilled for about 10).
Preheat oven to 180 deg. C.
Spoon out rounded teaspoonfuls of the dough onto prepared baking sheets. Roll into balls and press lightly with a fork.

Bake for about 12 minutes until golden brown.

  1. Anyway you could manage to use the same form of measuring throughout the recipe? Either, or. Both is ridiculous and frustrating.

  2. LOL at your comment! I assume you're from the USA (no offense - I love America) - but all the rest of us in the world are used to using different measurements in recipes. Just get out a measurement converter (they're free online).
