Ginger Crunch
Base:
250gm butter, softened1/2 cup icing sugar
2 tsp Baking Powder
2 cups flour
2 tsp ground ginger
Heat oven to 180degC. Cream butter and sugar, then add flour etc. Press into a slice tin, and bake for 10 minutes.
Topping:
3 TBSP butter
3 tsp ground ginger (or more if you like it extra spicy)
3 rounded tablespoons of Golden Syrup
2 TBSP Water
3 cups Icing Sugar
Heat without boiling until melted. Then add the icing sugar and beat well until there are no lumps. Pour onto warm base and chill until set. Slice.
